At this time of year I like to bake, just like everyone else, but everything I bake is for gifts. I found a bag of Ghiradelli peppermint bark bits (not the actual name) at a store a couple of months after Christmas 2018. I hoarded it until right now. I did not see them in the stores in December 2017. I haven't seen them again. So, I took a dark chocolate chocolate chip cookie and made them into dark chocolate peppermint cookies. Worked really well. These are totally craveable.
Double Chocolate Peppermint Cookies
Adapted from Maida Heatter’s Book of Great Cookies, 1977
1-3/4 cups sifted all purpose flour
1/4 tsp baking soda
1/2 pound (2 sticks) butter*
1 tsp vanilla extract
1 cup granulated sugar, I use organic
1/2 cup dark brown sugar, firmly packed, I used light
1/3 cup unsweetened cocoa, I used Droste dutched cocoa
2 tbsp light cream, I used half-and-half
3.5 oz (1 cup) pecans, broken in medium size pieces, I omitted this and used Ghiradelli Peppermint Bark pieces**
6 oz (1 cup) semisweet chocolate morsels, I omitted this too
Adjust two racks to divide the oven into thirds and preheat oven to 350 degrees F. Place silpat liners on 2 cookie sheets (original recipe calls for using aluminum foil on cookie sheets but that was 1977 and silpat liners did not exist. If you do not have any silpat than use nonstick foil.)
Sift together the flour and baking soda and set aside. In the large bowl of an electric mixer, cream the butter. Add the vanilla and both sugars and beat to mix well. On low speed add the cocoa and beat to mix. Then mix in the cream and, on low speed, gradually add the sifted dry ingredients, scraping down the sides of the bowl with a rubber spatula and beating only until mixed.
Remove the bowl from the mixer and, with a wooden spatula, stir in the peppermint chips.
Use a rounded (less than heaping) teaspoonful of the dough for each cookie. Place them about 1-1/2 inches apart (the cookies will spread during baking) on the silpat lined pans.
Bake for 12-13 minutes, reversing the sheets top to bottom and front to back once to insure even baking. The cookies will still feel soft and not done but don’t over-bake or they will become to hard.
Let the cookies sit for a minute and then remove to wire rack.
*normally I use either Shoprite or Kirkland (Costco) unsalted butter but all I had on-hand was European butter which I can only find salted so I omitted the remaining salt from the recipe.
**I found these at Job Lot a few months back. Not sure if they are still available. If not, crush a few candy canes and add them.
